Cantabrian anchovies made entirely in Santoña in a traditional and artisanal way. These anchovies are fished exclusively in the Cantabrian Sea (FAO zone 27).The maturation process lasts a minimum of 12-18 months, which gives us a characteristic colour and smell of our product.
Each one contains anchovies that are filleted by hand by skilled workers and are soaked in extra virgin olive oil. This is the best method of canning anchovy fillet because we want the olive oil to not only retain as much of its original flavor, but also keep most of the natural antioxidants and vitamins it holds.
